This was done out of need. I didn't have a lot of food on hand and had to feed three hungry kids ages 8, 8, and 5. People loved it, and one of my daughters asked why I made such a "fancy" meal. LOL) and after feeding our family of five, we still had enough food for lunch. This is my kind of dinner: easy to make, mostly healthy, and tasty.

Ingredients:

  • 16 ounces penne pasta
  • 14 ounces chicken sausage (I use Trader Joe's Mango Chicken Sausage)
  • 6 ounces Baby Spinach
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • salt and pepper

How to cook:

  1. Boil pasta per package directions.
  2. While the pasta is boiling, heat oil over medium heat in a very large skillet.
  3. Chop sausage into bite-size pieces. Add to skillet. Stir.
  4. Add salt, pepper, onion, garlic, and ginger powders. (ALL SPICE QUANTITIES ARE APPROXIMATE; I just gave each a few shakes until it smelled good. For the record, if I had fresh onion, garlic, and ginger, I would have used those instead!).
  5. Cook until the sausage is all the way hot.
  6. Add the spinach bag. (Next time, I might use two bags, but I only had one in the fridge this time.)
  7. Stir to mix flavors together well. If you want to speed up the cooking time, you can cover the pan. Cook the spinach until it is soft.
  8. When the pasta is done, drain it and add it to the pan. Stir to mix the tastes.
  9. Serve, and have fun!

  • 5 pounds skin on, boneless chicken thighs, cubed
  • 7 oz dried mango, finely chopped
  • 3/4 cup finely chopped jalapeno, seeded
  • 1/2 cup finely chopped fresh cilantro
  • 1 tablespoon minced fresh garlic
  • 2 tablespoons Kosher salt
  • 1 tablespoon paprika
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup ice cold water
  • 10 feet hog casings, soaked in tepid water for at least 30 minutes and rinsed

How to cook:

  1. In a small saucepan over medium heat, bring mango juice to a boil. Keep boiling until it gets thicker and is down to 1/4 cup. Take it off the heat, let it cool to room temperature, and then put it in the fridge until it's cold.
  2. In a large bowl, mix together the chicken, mango, jalapeno, cilantro, garlic, salt, paprika, and black pepper. Cool until you are ready to grind.
  3. Put the mixture through the small die and into a bowl that has been set on ice.
  4. Mix for 1 minute on low speed with the paddle attachment on a stand mixer. Add reduced mango juice and water, increase speed to medium, and mix until liquid is incorporated, about 1 minute more.
  5. Make a small sausage patty, and put the rest of the sausage mix in the fridge. In a small pan over medium-high heat, cook the patties until they are done all the way through. Taste the sausage and adjust the spices if needed.
  6. Stuff sausage into hog casings and twist into 6-inch links. Keep cold until you're ready to cook.
  7. Light the charcoal in one chimney. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over the whole surface of the coal grate. Set up the cooking grate, cover the grill, and let it heat up for 5 minutes. Clean the grill grate and put oil on it. Grill over medium-high direct heat until sausage registers 160 degrees when an instant read thermometer is inserted in middle of link. Take the food off the grill and let it rest for 5 minutes.
